Immune-Boosting Chicken and Vegetable Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 teaspoon turmeric
- 1 teaspoon ginger
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup spinach leaves
- Salt and pepper to taste
Instructions:
- In a large casserole pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
- Stir in turmeric and ginger, then add chicken broth. Bring to a simmer.
- Add chicken and spinach, and cook for another 5 minutes, until chicken is heated through and spinach is wilted. Add some noodles too if you like!
- Season with salt and pepper to taste. Serve hot.
