Let's bake!

We are loving these new Mason Cash Forest friends mixing bowls in warm, Autumnal colours. Don't they just inspire you to bake! If so, give these recipes a go- warm, easy, healthyish and delicious. When it's cold outside, there's nothing more comforting than a warm cuppa accompanied by a freshly baked sweet treat. 

Spiced chocolate chunk cookies

  •     1 tbsp ground flax seeds
  •     3 tbsp water
  •     1/2 cup butter
  •     1/3 cup sugar
  •     1 tsp  vanilla extract
  •     1 1/4 cup white spelt flour 
  •     1/2 tsp baking soda
  •     1/4 tsp salt
  •     3/4 tsp cinnamon 
  •     1/2 tsp ground ginger
  •     1/8 tsp nutmeg
  •     1 dark chocolate bar
  1. Preheat the oven to 180 degrees celcius and line baking pan with baking sheet
  2. Mix the flax with water and let sit until it turns in to a gel-like texture.
  3. Whisk together butter and sugar until combined.
  4. Add flax eggs and vanilla extract and mix again.
  5. Mix all the dry ingredients together in bowl.
  6. Slowly add the dry ingredients and mix until combined.
  7. Chop up the chocolate bar and add to the mixture.
  8. Refrigerate for 15 mins.
  9. Use a cookie dough scoop to scoop the dough onto the baking sheet.
  10. Bake for 9-12 mins, let cool and enjoy!

Mini Blueberry Banana Bread

  • 1 cup all-purpose flour
  • 3/4 cup spelt flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/4 cup butter, softened
  • 1/2 cup organic sugar
  • 1 tablespoon lemon zest
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1 1/2 cups blueberries
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons of almond milk
  • Juice of 1/2 a lemon

 

  • Preheat oven to 180°c. Line 4 mini loaf pans with parchment paper.
  • Combine the dry ingredients in a medium bowl and mix well.
  • In a large bowl, whisk the softened butter. Add in the sugar through the vanilla and beat just until well incorporated.
  • Switch to a whisk and add the mashed bananas to the wet mixture.
  • Gradually incorporate the dry ingredients into the wet mixture, whisking to combine. If the mixture gets too heavy to whisk, switch to a wooden spoon.
  • Fold the blueberries into the banana bread mixture.
  • Transfer the mixture to the prepared loaf pans. Bake in the oven for approximately 20-25 minutes.
  • Make the sugar glaze by pouring sugar into a bowl and gradually adding the milk until you achieve desired consistency.
